Pumpkin Fruit Bread
Ingredients:
2 cups
sugar
2/3 cup
softened butter or margarine
1/2 cup
water
3
eggs
2 teaspoons
soda
1 teaspoon
salt
2 teaspoon
cinnamon
1/2 teaspoon
cloves
2/3 cup
chopped dates or raisins
1 cup
chopped nuts
15 oz. can
Pumpkin
2 1/2 cups
All purpose of unbleached Flour
Instructions:
Preheat oven to 325 degrees. In large bowl combine pumpkin, sugar, butter, water and eggs. Beat 1 minute at medium speed with an electric mixer. Ad d flour, soda, salt, cinnamon and coves. Beat 1 minute at medium speed. Stir in dates or raisins and nuts. Pour into a greased (not oiled) 8x4 inch or 9x5 inch loaf pan. Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove from pan and cool completely. Yield: makes 2 loaves
