Cajun Fried Turkey
Ingredients:
1 (10 to 11 pound)
turkey
1 ounce
Cajun spicy chicken seasoning
1 oz.
Cajun Blackened Fish Seasoning or Creole Seasoning
3-5 gallons
Peanut Oil (to cover turkey)
Instructions:
Rinse and dry turkey thoroughly, both outside and inside cavity. Trim all fat. Mix spice and sprinkle turkey heavily, both outside and inside cavity. Refrigerate overnight. Heat oil to 350 degrees. Slowly lower turkey into oil. Using a candy thermometer, maintain oil at 350 degrees to 375 degrees while cooking. Cook for 4 minutes per pound. Do not stuff turkey.
