Seafood Eggrolls

Ingredients:

1 tablespoon
olive oil
2 tablespoons
minced celery
2 tablespoons
chopped bean sprouts
1 tablespoon
grated carrot
2 tablespoon
grated onion
2 teaspoons
sugar
1 teaspoon
salt
pepper
24
egg roll wrappers
1
beaten egg
1 teaspoon
water
oil for frying
2 cups
Chopped Seafood (Crab or Shrimp of both)

Instructions:

Saute vegetables in olive oil in a heavy skillet until crunchy-tender. Add seafood, sugar, salt and pepper. Set aside. Divide seafood mixture evenly among egg roll wrappers, placing some of mixture in center of each wrapper. Fold two sides of wrapper over filling and seal ends. Brush with egg beaten with water. Fry in deep, hot oil until golden brown. Serve with hot mustard or sweet and sour sauce. The best in town. Yield: 24 eggrolls
