Perfect Red Rice

Ingredients:

1/2 pound
bacon
2
large chopped onions
2
large chopped bell peppers
1 (46 ounce) can
tomato juice
to taste
salt; pepper; garlic; etc.
1(46 ounce) tomato juice can
Instant Rice

Instructions:

Chop bacon and fry in large pan until brown. Remove bacon and save drippings. Sauté onions and bell peppers in bacon drippings (3 to 4 minutes). Add bacon , tomato juice, and seasonings and bring to boil. Add instant rice (always use equal amounts of instant rice and tomato juice), cover and simmer for 10 minutes. Add smoked sausage or shrimp for variety. You'll never have gummy or raw rice again.
