Deluxe Scalloped Tomatoes
Ingredients:

fresh tomatoes
1/2 cup
melted butter
1 cup
chopped onion
2 tablespoons
brown sugar
1/2 teaspoon
salt
1/2 teaspoon
nutmeg
3 cups
white bread crumbs
Instructions:
Peel tomatoes, cut 3 slices to reserve for top garnish, and chop rest of tomatoes. Saute onion in 2 tablespoons of butter. Add all remaining ingredients to onions, except bread cubes and remaining butter. Simmer for 15 minutes. Toss bread with butter to coat. Layer 2 cups bread cubes in a greased 10 inch quiche or pie pan. Cover with tomato mixture and top with remaining bread. Bake at 375 degrees covered for 15 minutes. Uncover, top with reserved tomato slices brushed lightly with vegetable oil and bake uncovered for 15 more minutes. Can substitute 3 1/2 cups canned tomatoes for fresh tomatoes. Garnish with parsley. Yield: 8 servings
