Lite Prawns And Pasta
Ingredients:
1 cup
water
1/4 cup
unsalted butter or margarine
3
large minced garlic cloves
1 1/2 teaspoons
cornstarch
4 teaspoons
lemon juice
2 tablespoons
fresh minced parsley
1/2 teaspoon
crushed red pepper
2 Tbs.
Soy Sauce (lite/low sodium)
3/4 lb.
Medium Shrimp (peeled & deveined)
1/2 cup
Green Onions (sliced with tops)
1/4 cup
Fresh Basil Leaves (chopped, packed)
1/2 lb.
Vermicelli, Spaghetti or Linquine
Instructions:
Combine soy sauce and 1 cup water in small saucepan; bring to boil. Add shrimp and cook 2 minutes or until shrimp are pink. Reserve liquid. Remove shrimp and keep warm. Heat butter in large skillet over medium heat. Add green onions and garlic, saute 2 minutes. Combine cornstarch and lemon juice into skillet along with the reserved shrimp liquid base. Bring to boil and simmer 1 minute. Toss sauce, shrimp, parsley and pepper together with hot pasta. Serve immediately. Best served with crisp garlic bread and fresh tossed green salad. Yield: 4 servings
