Primavera Pasta
Ingredients:
1 (16 ounce) package
vermicelli
1 cup
broccoli florets
1 1/2 cups
thin carrot strips
1 1/2 cups
red pepper slices
1 1/2 cups
green pepper slices
1/4 cup
olive oil
2 cups
shredded zucchini
2
minced garlic cloves
2 teaspoons
basil
1 teaspoon
oregano
1/2 teaspoon
salt
1/4 teaspoon
pepper
1/4 cup
butter
1/2 cup
Parmesan cheese
Instructions:
Cook pasta as directed, drain and set aside. Boil or steam broccoli and carrots until crisp tender (do not over cook). Saute pepper strips in oil until tender. Add zucchini and garlic; saute 1 minute. Add carrots, broccoli, pasta and seasonings. Add butter and toss to coat. Sprinkle with cheese. Makes a great meatless meal. Yield: 8 servings
