Puff Pastry Shells
Ingredients:
5 cups
beer (room temperature)
2 1/2 cups
butter or margarine
5 cups
all-purpose flour
2 1/2 teaspoons
salt
20
eggs
10 tablespoons
Parmesan cheese
Instructions:
In saucepan bring beer to boil and add butter and stir until melted. Stir in flour and salt. Cook until mixture dries and forms a ball. Remove from heat. Add eggs, 1 or 2 at a time, beating into batter until smooth. Place batter in pastry bag fitted with a large writing tip. Using a swirling motion place puff on baking sheet (allow room for expansion). Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees for an additional 10 minutes or until lightly browned. Cool. Slice and fill with choice of ham salad, tuna salad, chicken salad or shrimp salad. Yield: 10 dozen
