Frogmore Stew
Ingredients:
1/2 cup
salt (2 tablespoons in each pot)
8 sliced lemons (2 in each pot)
20 pounds
divided smoked sausage
100 ears corn (cut in 3 pieces) divided
50 pounds
deveined shrimp
water to fill 4-20 qt. pots
4 (3 oz.) boxes
seafood seasoning (1 box per pot)
1/4 cup
pepper (1 tbs. per pot)
2 (5 oz.) bottles
Worcestershire sauce (1/2 bottle per pot)
1 (1/8 oz.) jar
bay leaves (6 leaves per pot)
4 Tbs.
cloves (1 tbs. per pot)
40 pounds
new potatoes (halved)
Instructions:
Bring water to boil. Add seafood seasoning, salt, pepper, Worcestershire sauce, bay leaves, cloves, lemon slices. Add sausage and potatoes, divide among the pots, and cook for 10 minutes. Add corn, divide among pots, and cook for 10 minutes. Add shrimp, divide among pots, and cook for 5 minutes. Remove from heat and drain. Serve immediately. Yield: 100 servings
