Chicken Squash Delight

Ingredients:

small thinly sliced squash
2
medium thinly sliced zucchini squash
1/2
chopped bell pepper
1
sliced small onion
vegetable cooking spray
4
boneless chicken breasts, cut in small pieces

Instructions:

Spray frying pan with vegetable cooking spray. Place chicken in the pan. Cook under low heat for 20 to 30 minutes. In another frying pan sprayed with cooking spray, combine squash, zucchini, bell pepper, and onion. Cover and let cook on low heat for 15 minutes, stirring every 3 to 4 minutes. Combine chicken and vegetables. Serve over rice. Yield: 6 servings. NUTRITION PER SERVING: Calories 201, Fat 4 grams, Cholesterol 97 milligrams, Sodium 86 milligrams.
